Ethan’s Corn Rice Dish

Ethan invented a recipe. It sounded interesting, so we let him have a go. It was more than edible and really quite tasty. Without further adieu, here is Ethan’s Corn Rice Dish:

Corn Rice Dish

1 lb pork stew meat
4 cloves garlic minced
1 onion chopped
2T oil
1/4 c white wine
2 cups frozen corn 
4 med carrots chopped
1/2 tsp cinnamon
1T herbs de provence
1/4-1/2 tsp crushed red pepper flakes
6 c chicken broth
2 c white rice
Heat oil under medium heat and add pork, onion and garlic.  Cook and stir until onions are soft and meat is cooked through.
Deglaze with wine.
Add and bring to a boil corn, carrots, cinnamon, herbs, red pepper flakes, and broth.
Simmer approx 45 min or until liquid is absorbed. If you omit the rice, simmer until carrots are soft.
Serve with garlic bread
